Pancake Day 2015

I found this recipe on UK TV food as a savoury alternative to the usual sweet pancakes we have on Shrove Tuesday. When I get in from work I want something savoury for dinner and this seemed to be the best approach. So what with being healthy and for the start of year I have chosen a spinach crepe with cheese and ham. They are absolutely delicious. Plus they are VERY green!

The other bonus about making these spinach pancakes/crêpes is the look on other people’s faces when they see the vivid green pancakes put on the plate. They are very green!

This recipe feeds six people – as I am just making this for two I will divide it by three.

Ingredients

100 g fresh spinach

300 ml milk

150 g sieved plain flour

2 large eggs

2 tablespoons butter melted

225 g Gruyere cheese grated

260 g cooked ham shredded

Equipment

Sieve

Grater

Food processor / Vitamix

Frying pan nonstick

Ovenproof dish

Method

1. In your food processor blitz the spinach and milk, until smooth. Add the flour and eggs and blitz again to incorporate. Stir the tablespoons of melted butter through the batter. *It is really important that your batter is smooth and that there are no lumps. Let it sit for 5 to 10 minutes.

2. Take a frying pan and place over medium high heat with a little of the melted butter. Add a ladle of batter and swirl the pan until the batter completely coats the base.

3. Cook the crepe for 1 to 2 minutes on one side, then flip over, turn the heat down and top with a little of the cheese and ham. Cook for one 1 minute before folding in half, then into quarters. Try not to fill it too full otherwise it won’t fold.

4. Pop the cooked crêpes into an oven proof dish and keep warm in the oven at 120 C . Repeat the process with the remaining batter, ham and cheese.
